Some days, you just gotta look around at your fridge, see what you got, and make, well, magic.
In this case, though, I noticed I had a couple lemons, three tomatoes on their way out, and plenty of fresh basil out in the garden, and I thought to myself, "surely I can do something with that quick." A trip to the grocery store later for some pasta and chicken and spinach, and I had myself a delicious bit of lemon basil pasta for dinner with plenty of leftovers. I always plant so many herbs in the garden, just to forget to use them, but today was a good reminder of the fact that I actually have enough basil to warrant maybe trying a little harder to use it. My first two times growing basil, I didn't have nearly this level of success, so this is pretty damn good.

Magic in Lemon Basil Pasta

Lemon Basil Pasta
Prep time: 20 minutes
Rest time: 30 minutes
Makes 3-4 servings
Ingredients:
1 1/2 lbs chicken
1 bag of spinach (227g)
1-2 cups chopped fresh basil
1 lemon (for zest & juice)
1 onion, diced
4 cloves garlic, minced
2 Tbsp low sodium soy sauce
1/2 Tbsp garlic powder
1/2 Tbsp onion powder
1 lb penne pasta
2 tsp olive oil
Salt and pepper to taste
(Optional) 2 cups chopped summer vegetables (zucchini, tomato, eggplant, etc.)
Directions:
Dice your onion and fry in olive oil with salt and pepper until soft.
Add garlic, frying until fragrant.
(Optional) if using eggplant or zucchini, add it here.
Chop your chicken into one inch cubes and cook until browned on all sides, then add soy sauce and let cook through.
(Optional) if using tomatoes, add them here.
Add spinach bit by bit until wilted and incorporated, then add the zest and juice of one lemon.
Add chopped basil and toss together.
Add cooked pasta to the pot, stir together, and let sit off the heat for five minutes before serving.
