Because sometimes you want pancakes without sacrificing the gains, y'know?
Now, for anyone who saw my interview with Lugh last week, you may have noticed that I had a certain pancake there as an offering. I was originally going to make some traditional Scottish bannock bread, but I decided: since it's basically just a bread made in a pan, why not make pancakes instead? It still uses oats, it still has blueberries—and it even has some extra protein to it.
And it's gluten free!
So there was born the Blueberry Lemon Protein Pancake, and I gotta say, these were really good. The oat flour used in here instead of regular flour gave it a really nice flavor, and there's just enough whey to add more protein without making the texture weird. And of course, with lemon, blueberry, oat, and vanilla in here, it's also a perfect and easy magical breakfast.

Magic in Blueberry Lemon Protein Pancakes
So, as you may imagine, lemon and blueberry are a godly combo in both flavor and magic. That's because where lemons purify and invite friendship, blueberries are actually really good as hex breaking and protective fruits. Put them together, and you have the means to both beat off any bad energy and get yourself primed and ready for good energy—which the vanilla and oat then bring in! Love, fertility, abundance, mental strength, it's all there with those two.
The main elements and planets here are water, earth, and a touch of fire, as well as Venus, the Moon, and a touch of Mars. Together, this makes for a very peaceful, stable, grounded energy, one focused on getting in tune with one's emotions and turning one's attention to the beautiful. If you've been feeling overwhelmed, ungrounded, unstable, and generally like things are just heating up too much for you, this is a breakfast that'll help you reset before another day and put a healing balm on all that upset. It'll also help you find the drive to keep going another day.
Lemon Blueberry Protein Pancakes
Prep time: 10 minutes
Cook time: 20 minutes
Makes 3-4 servings (12 pancakes)
Ingredients:
2 cups of washed blueberries
1 cup (120g) rolled oats
3 tsp (12g) baking powder
1/4 cup (50g) sugar
1 pinch of salt
2 Tbsp (~30g) whey protein powder
1/2 cup (120g) Greek yogurt
30ml (~2 Tbsp) vanilla extract
1 lemon's worth of zest / 5-10ml lemon extract
2 Tbsp (~30ml) olive oil
Directions:
Blend 120g of oats into a food processor until it becomes fine like flour.
Mix together your dry ingredients, then beat together with wet ingredients until a batter forms.
Heat a pan on medium low. When hot, ladel one spoonful of batter per pancake.
As the cakes cook, drop blueberries into the top while still soft.
Flip when golden brown and cook the rest of the way through.
Serve with maple syrup.
Keep in mind that since there's no gluten, the pancakes will be easy to break. You don't want to flip them until they're completely cooked.
