My favorite muffin for breakfast (but, of course, nothing beats chocolate chip)!
Now, maybe I'm just fussy, but there are two types of muffins to me: breakfast muffins and dessert muffins. Chocolate chip muffins are by far my favorite muffin, but they scream dessert, not an actual breakfast.
Lemon poppy seed muffins, though—those are breakfast muffins to me. Something light and bright and fresh-tasting to start the day with makes me feel a bit peppier than something that's otherwise decadent and chocolatey (and when you consider lemon's magical properties of purification and the like, it's easy to see how this citrusy flavor wakes you up a bit better).
I got the original recipe from Handle the Heat with Tessa Arias, and while I enjoyed them, I did doctor this a little so that there's more lemon flavor. There wasn't enough for me originally!
Beyond that, I also found the base batter to be pretty standard, meaning you could also supplement other items in this batter depending on your magical needs. Maybe you toss in some apples and cinnamon, or walnuts and banana, or, yes, chocolate chips and vanilla.
Whatever you decide to do, though, chances are you're going to get a damn good muffin.
Magic in Lemon Poppy Seed Muffins

Lemon Poppy Seed Muffins
Prep time: 20 minutes
Cook time: 20 minutes
Makes 6 - 12 Muffins
Ingredients:
2 cups | All Purpose Flour |
3/4 cup | Sugar |
1 Tbsp | Baking Powder |
1/2 Tspo | Baking Soda |
1/2 tsp | Salt |
1 large | Egg, room temperature |
1 cup | Whole Milk, room temperature |
1 stick | Unsalted Butter, melted |
FOR LEMON MUFFINS | |
2 Tbsp | Lemon Juice |
3 Lemons Worth | Lemon Zest |
2 Tbsp | Poppy Seeds |
*For other muffins, try:
1 Tbsp cinnamon & 1 tsp nutmeg with peeled & finely chopped apple,
or remove 1/2 cup milk and add 1 mashed banana and 1 cup toasted & chopped walnuts,
or just add 2 tsp vanilla extract and 1 cup of chocolate chips!
Directions:
Preheat oven to 400 degrees Fahrenheit
Whisk all dry ingredients together in a bowl
In a smaller bowl, whisk zest, egg, juice, milk, & butter
Pour wet ingredients into dry ingredients
Grease or line a muffin tin (6 big muffins or 12 little ones)
Optional: let sit in the fridge for a couple hours before baking
Bake until toothpick comes out clean (18-20min)
Let sit until cool (or eat it warm with some butter!)
