Even the simplest comfort food can become a magical meal.
Fried potatoes. It's a classic "poor man's" dish my mom always used to make, and it's the embodiment of comfort food. It's so simple that you only need four ingredients: onion, potato, salt, and pepper. (But of course, you can add extra things, like garlic or crushed red pepper, and add a protein to it like sausage.)
This was something that had my friends come running over a couple times when mom made it, because it's warm and hearty and so very satisfying. And while we're on the topic of hearty comfort food, it's good to reflect on what comfort even means: that you feel safe, happy, and cozy. That your worries about the world are gone, just for a second, while you focus on resting and relaxing with a good bowl of food. That food's going to give you the energy you need to keep going, even when you're exhausted to the bone. And when you utilize the magic in potatoes, onions, garlic, and red pepper (and even in salt and black pepper), you'll find that it'll give you the mental and emotional energy to keep on trucking, too.

These humble, everyday ingredients are honestly some really powerful ones when it comes to kitchen magic. They carry the qualities of healing, protection, and exorcism, banishing all that muck and stress of a long day, fortifying you as you relax, and giving you the comforting, healing energy to recover for the next day.

Mars is a planet of ambition, war, that fighting spirit, and the Moon the body of our subconscious, our feelings, and our deepest thoughts. Fried Potatoes (Pražen Krompirje)
Prep time: 15 minutes
Cook time: 20-25 minutes
Makes 2-4 Servings
Ingredients:
5 to 6 Medium | Potatoes, peeled & diced |
2 Large | Onions, diced |
3 Cloves | Garlic, crushed |
1-2 Tbsp | Crushed Red Pepper |
(Optional) 4 Links | Sausage of Choice, sliced (kielbasa, chorizo, hot dogs, etc.) |
Salt & Pepper | To Taste |
Directions:
Peel & dice your potatoes, then boil in salted water until just about done (make sure you don't overcook them).
In a little olive oil, fry your onions until golden brown.
Add garlic & red pepper, cooking until fragrant.
If adding sausage, add to onions & let fry for a few minutes until fat releases.
Drain your potatoes and add them to the onions.
Let cook until potatoes are fully soft, mixing to combine with all those flavors.
